   Provide leadership and oversight for Food and Beverage management activities; manage facilities, business development and execute aggressive cost containment initiatives to ensure optimized profitability results.

   Monitor, analyze and forecast costs; ensure compliance with service, guest satisfaction, merchandising and marketing objectives, and collaborate with GM to formulate smart pricing strategies, menu planning and beverage/wine lists.

   Led management initiatives to oversee kitchen and operations activities; maintained inventory for kitchen and bar, interacted with vendors to negotiate pricing and place orders, and scheduled a staff of 20 to ensure appropriate coverage.

   Managed staff of 20, delegated responsibilities, handled all purchasing, inventory and business office functions.

   Provided supervision and direction for all facilities management responsibilities; ensured that the establishment was clean and ready for business at all times, inspected kitchen and food preparation areas regularly for compliance with safety and sanitation standards.

   Analyzed sales levels and profitability, prepared revenue and operations reports for food control and sales.

   Provided technical support, troubleshooting and problem resolution for 6 locations; installed, repaired and maintained Option 11-81 Nortel Meredian1 Systems, XT, NT PBX, ACD Max, Automated Call Distribution, Octel Voice Mail and Centigram Voice Mail systems.
